Ingredients
Makes 1 serving
- 3 eggs
- 2 cups baby spinach
- ¼ red onion, finely diced
- 1 green chilli, finely chopped
- 2 tbsp cilantro, chopped
- ¼ tsp ground turmeric
- ¼ tsp ground cumin
- 1 tbsp neutral oil
Method
- 1Beat the eggs with the turmeric, cumin and a good pinch of salt.
- 2Warm the oil in a non-stick pan over medium heat. Cook the onion and chilli for 2 minutes, then add the spinach and let it wilt.
- 3Pour in the eggs, stir once, then leave to set for 2 to 3 minutes.
- 4Fold, slide onto a plate and scatter with the cilantro.
