Tuna and white bean lettuce cups

Ingredients
Makes 2 servings
- 1 can (5 oz) tuna in olive oil, drained
- ¾ cup cannellini beans, rinsed
- 1 tbsp olive oil
- Juice of half a lemon
- 2 tbsp red onion, finely diced
- 2 tbsp flat-leaf parsley, chopped
- 6 to 8 baby gem lettuce leaves
Method
- 1Flake the tuna into a bowl and add the beans, crushing about a third of them with a fork.
- 2Stir through the olive oil, lemon juice, onion and parsley. Season well.
- 3Spoon into the lettuce leaves.
