Chicken shish with garlic yogurt

Ingredients
Makes 2 servings
- 1 lb chicken thighs, boneless and skinless, cut into chunks
- ½ cup plain Greek yogurt, plus ⅓ cup for the sauce
- 2 tbsp olive oil
- 1 tsp sweet paprika
- 1 tsp ground cumin
- 1 tsp dried oregano
- Juice of 1 lemon
- 1 small head cauliflower, cut into florets
- 1 clove garlic, grated
- 2 tbsp flat-leaf parsley, chopped
Method
- 1Mix ½ cup of the yogurt with 1 tbsp oil, the paprika, cumin, oregano and half the lemon juice. Toss the chicken through it and leave for at least 15 minutes.
- 2Heat the oven to 425°F. Toss the cauliflower with the remaining oil and roast for 10 minutes.
- 3Thread the chicken onto skewers, add to the pan and roast for another 18 to 20 minutes, until cooked through and charred at the edges.
- 4Stir the grated garlic and remaining lemon juice into the ⅓ cup yogurt. Serve alongside, with the parsley.
