Shakshuka with feta

Ingredients
Makes 2 servings
- 1 tbsp olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, sliced
- 1 tsp ground cumin
- 1 tsp sweet paprika
- ¼ tsp chilli flakes
- 1 can (14 oz) chopped tomatoes
- 4 eggs
- 2 oz feta, crumbled
- 2 tbsp flat-leaf parsley, chopped
Method
- 1Warm the oil in an oven-safe skillet and cook the onion and pepper over medium heat for 8 minutes.
- 2Add the garlic and spices and stir for 1 minute, then pour in the tomatoes. Simmer for 8 minutes until thickened.
- 3Make four wells in the sauce and crack an egg into each. Cover and cook for 5 to 7 minutes, until the whites are set.
- 4Scatter over the feta and parsley.
