Ginger beef and bok choy with buckwheat noodles

A stir-fry on soba, with 35g of protein a serving.

Ingredients

Makes 2 servings

  • 4 oz 100% buckwheat soba noodles
  • 10 oz flank steak, sliced thinly against the grain
  • 4 heads baby bok choy, quartered
  • 1 tbsp neutral oil
  • 2 tbsp grated ginger
  • 3 cloves garlic, sliced
  • 2 tbsp tamari
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 2 scallions, sliced

Method

  1. 1Cook the soba to the package time, drain and rinse under cold water so it does not clump.
  2. 2Get a wok or wide pan very hot. Sear the beef in the neutral oil for 90 seconds, then lift it out.
  3. 3Add the ginger and garlic, stir for 30 seconds, then add the bok choy and 2 tbsp water. Cook for 2 minutes until just tender.
  4. 4Return the beef, add the noodles, tamari and rice vinegar, and toss for 1 minute. Finish with the sesame oil and scallions.
