Ginger beef and bok choy with buckwheat noodles

Ingredients
Makes 2 servings
- 4 oz 100% buckwheat soba noodles
- 10 oz flank steak, sliced thinly against the grain
- 4 heads baby bok choy, quartered
- 1 tbsp neutral oil
- 2 tbsp grated ginger
- 3 cloves garlic, sliced
- 2 tbsp tamari
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 2 scallions, sliced
Method
- 1Cook the soba to the package time, drain and rinse under cold water so it does not clump.
- 2Get a wok or wide pan very hot. Sear the beef in the neutral oil for 90 seconds, then lift it out.
- 3Add the ginger and garlic, stir for 30 seconds, then add the bok choy and 2 tbsp water. Cook for 2 minutes until just tender.
- 4Return the beef, add the noodles, tamari and rice vinegar, and toss for 1 minute. Finish with the sesame oil and scallions.
