Sesame chicken and cabbage slaw

Ingredients
Makes 2 servings
- 10 oz cooked chicken breast, shredded
- 4 cups napa cabbage, finely shredded
- 1 cup red cabbage, finely shredded
- 1 carrot, julienned
- 3 scallions, sliced
- 2 tbsp tahini or smooth almond butter
- 2 tbsp rice vinegar
- 1 tbsp tamari
- 1 tbsp toasted sesame oil
- 1 tbsp grated ginger
- 1 tbsp toasted sesame seeds
Method
- 1Whisk the tahini, rice vinegar, tamari, sesame oil and ginger with 2 tbsp warm water until pourable.
- 2Toss the cabbages, carrot and scallions with about two-thirds of the dressing.
- 3Fold through the chicken, then add the rest of the dressing to taste.
- 4Scatter with the sesame seeds and eat within the hour, while the cabbage is still crisp.
